I looooove me some chicken salad. When I was in college and I was just starting to find my own way in the health world, I started eating tuna salad every day because chicken was more expensive than tuna.
Once I left college, I couldn’t even look at tuna again. I’ve bought many packets since and they just sit in my pantry because I can’t even think about that smell. So instead, I make chicken salad now!
And it’s one of my favorites because I can eat it for lunch all week long. Yesterday I ate it with Simple Mills Black Pepper Crackers and some veggie spears, and it was the perfect little lunch! Any recipe that gets better with time is a recipe I can get behind. Also any other recipe I make. I gotta support all my recipes, ya know?
